What it is
A galactomannan-rich gum obtained from the endosperm of carob tree seeds and used mainly as a thickener, stabiliser and gelling aid.
Why BOTIA flags it
Locust bean gum is obtained from the seed of the carob tree. It thickens and stabilises, and in ice cream it prevents ice crystals from forming — which is why it is found in almost all of them. The body does not digest it.
