Konjac
E425
E425, E425i, E425ii, konjac gum, konjac glucomannan, konjac flour, goma konjac
What it is
A water-soluble, high-molecular-weight glucomannan fibre obtained from the tuber of Amorphophallus konjac; it thickens water and can form firm gels.
Why BOTIA flags it
BOTIA flags E425 because it can make firm gels that present a choking risk. EU rules prohibit konjac in jelly confectionery, including jelly mini-cups intended to be swallowed in one bite.
BOTIA CAN
- Detect E425, konjac gum, or konjac glucomannan on labels.
- Trigger texture layer and provide choking safety warning.
BOTIA CANNOT
- Verify the exact viscosity or molecular weight.
- Verify if washed with ethanol for purification.
