Konjac

E425

E425, E425i, E425ii, konjac gum, konjac glucomannan, konjac flour, goma konjac

What it is

A water-soluble, high-molecular-weight glucomannan fibre obtained from the tuber of Amorphophallus konjac; it thickens water and can form firm gels.

Why BOTIA flags it

Konjac absorbs a great deal of water and forms a firm gel that does not break down with saliva. In bite-sized jellies this creates a choking risk, which is why they are prohibited in the European Union. The risk is physical, not chemical.

BOTIA CAN

  • Detect E425, konjac gum, or konjac glucomannan on labels.
  • Trigger texture layer and provide choking safety warning.

BOTIA CANNOT

  • Verify the exact viscosity or molecular weight.
  • Verify if washed with ethanol for purification.
