What it is
A four-carbon polyol, or sugar alcohol, produced by fermenting a carbohydrate source with food-grade osmophilic yeasts, then purified and dried.
Why BOTIA flags it
BOTIA flags E968 because it is a bulk polyol, not just an intense sweetener. EFSA's 2023 re-evaluation set an ADI from human diarrhoea data. EU rules require a laxative-effect warning above 10% added polyols; WHO's 2023 recommendation excludes polyols.

- Detect E968 or Erythritol and trigger the sweetener layer.
- Notify the user of its low-glycemic, low-calorie properties.

- Verify which yeast strain was used for fermentation.
- Measure the exact quantity added to the product.
