What it is

Animal blood and separated fractions of blood, including plasma, plasma proteins and haemoglobin. These ingredients can provide binding, gelling, water-retention or colour functions in meat products.

Why BOTIA flags it

Blood and its derivatives — plasma, haemoglobin and blood proteins — are used for binding, gelling or colour in sausages and other processed meat products. In products such as blood sausage the blood is obvious; in others it can appear as “plasma”, “plasma protein” or “haemoglobin”, terms that do not contain the word blood. Codex explicitly includes blood among the sources excluded from foods carrying a halal claim.
