What it is
A flour-treatment and dough-conditioning ingredient used in specified food applications in the United States.
Why BOTIA flags it
Azodicarbonamide is used to condition flour and breaks down during baking. One of its breakdown products is semicarbazide, and that is the compound that is studied. In the European Union it is not authorised in food; in the United States it is, and the FDA has had it under review since 2026.
